BUTTER BUDS® 32X (38161) is a natural butter concentrate produced by liberating the fatty acids in butterfat, then encapsulating into a water soluble powder by spray drying with whey powder and maltodextrin. One pound/kilo yields the flavour strength of approximately 32 pounds/kilos of whole butter. Potential uses: impart richness/flavour enhancement to soups, sauces, dehydrated potatoes, cheese seasonings and bakery. Usage level: 0.5 - 2.0% of total batch weight.
