BUTTER BUDS® GHEE NATURAL (66896) is a kosher certified butter concentrate, designed to contribute the flavour of cooked butter. Produced by liberating the fatty acids in butterfat, then encapsulating into a water soluble powder by spray drying with maltodextrin. One pound/kilo yields the flavour strength of approximately 80 pounds/kilos of cooked butter. Potential uses: contributes caramelized, browned, cooked butter or fried flavour to soups, sauces, dry mixes, beverages, cookies, entrees and sugar-free applications. Can be used where production methods prohibit traditional browning or sautéing. Usage level: 0.25 - 1.0% of total batch weight.
