Maxapal® A2 is a kosher and halal certified enzyme preparation for food use containing purified phospholipase A2 derived from a selected strain of Aspergillus niger. Application market: Egg-processing industry (converting lecithin in eggs into lysolecithin). Maxapal® A2 enzyme from DSM is used to modify egg yolks and give egg yolk-based products superior emulsion properties.
